Recipe for Cranberry-Orange Quick Bread

Ingredients:

2 cups all-purpose flour

¾ cup sugar

1½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

¾ cup orange juice

¼ cup vegetable oil or melted butter

1 egg

1 tablespoon orange zest

1½ cups fresh or frozen cranberries,roughly chopped

Optional: ½ cup chopped walnuts or pecans

Directions:

Preheat oven to 350°  F. Grease a 9-by-5-inch loaf pan.

In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt.

In a separate bowl, whisk orange juice, oil or butter, egg, and orange zest.

Stir wet ingredients into dry ingredients until combined. Fold in cranberries and nuts, if using.

Pour into loaf pan and bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean.

Cool before slicing.

Optional glaze: Mix ¾ cup powdered sugar with 1 tablespoon orange juice. Drizzle over cooled bread.
